Tamales de chipilín in Chiapas

Chiapas is one of the regions with the greatest variety of tamales in the country. The one that most represents the state is chipilín, which is a wild plant that enhances regional foods. In this case, the herb is mixed with the dough and the filling can be chicken or cheese. Those chipilín leaves are a real gem.
